Sweetness results from what we choose to emphasize in the roasting process and an ideal balance of the inherent acidity and bittersweet characteristics of coffee. We buy coffees that taste sweet and we roast to bring out the sweetness that exists in each coffee.
Bright
Brightness is what makes coffee exciting. It’s the sparkling effervescence of the beverage on your palate resulting from the coffee’s fruitlike qualities and naturally occurring acids. We roast each coffee to be bright and dynamic in combination with natural sweetness.
Clean
When we say clean, we mean that our coffee has a refined clarity of flavors, a certain transparency in the cup. We roast to provide an optimal mouthfeel of the coffee on your palate with no muddled flavors and a truly ‘clean’ taste.
