Finca Las Moras in Guajiquiro, Honduras

Finca Las Moras is located in Guajiquiro, La Paz, Honduras, and is managed by Heber Hernán Ávila, a 39-year-old, third-generation coffee producer. The farm, named after the delicious blackberries (“moras”) grown in the area, spans approximately 4.2 hectares at elevations of 1,600–1,800 m.a.s.l. Here, Heber cultivates IHCAFE 90 and Catimor varieties.

For the Natural lot, cherries are harvested at their ripest and dry-fermented for 48 hours. They are then laid to sun-dry on raised beds (sarán) for 15–18 days with constant movement.

For the Honey lot, cherries are de-pulped and immediately laid to sun-dry for 9-12 days, with constant movement to ensure an even drying.

Heber Ávila began his coffee journey two decades ago, following in the footsteps of his father and grandfather. While part of Finca Las Moras is family inheritance, Heber expanded the family farm by acquiring nearby land.

With a sustainable approach to coffee growing, Heber supervises every step of the way… ensuring nothing goes to waste and reducing the farm’s water consumption.

We have been working with Finca Las Moras and Heber since 2025, and his expertise has us excited for what is to come.
