Processing details: The coffee undergoes a 14-hour fermentation process in its cherry form. After this, it is pulped together with the coffee collected the following day and then left to dry ferment for 36 hours in a mayolica tank. Once this process is complete, the coffee is washed and then submerged in water for 12 hours before being moved to the drying area. The drying process lasts 18 days.

About Hamith
From a young age, Hamith Burbano Muñoz has been immersed in the world of coffee. At the age of 12, he began working on his parents' farm, helping with fruit harvesting and various agricultural tasks. Over time, his enthusiasm and commitment to working in the fields only grew stronger.
Following his family’s tradition, at 15, he set out in search of new opportunities as a coffee picker in different regions. His first destination was Teruel, in northern Huila, but over the years, he travelled farther, reaching Andes and Bolívar in Antioquia. These were demanding experiences, as he worked on large farms with more than 1,000 pickers. The workdays were intense, and the coffee-weighing process could last until midnight, leaving little time even to eat.
At 25, with the support of his brother Jenaro Burbano, he decided to take the next step and planted his first 1,000 Caturra trees on his parents' farm. However, with the arrival of coffee rust, he had to adapt and replace those crops with more resistant varieties, establishing 1,500 Cogollo Morado trees.
In 2010, Hamith joined the Los Naranjos associative group, a decision that would shape his journey.
There, he began working with specialty coffees, understanding the importance of quality and continuous learning to improve his production. By 2016, alongside his brother, he decided to expand their production on additional plots, planting 2,450 Bourbon Rosado trees, now five years old, and 7,770 Cogollo Morado trees, which have been growing for six years.
In 2024, Hamith celebrated a major achievement: his first micro-lot delivered under his name, composed of 850 Bourbon Rosado trees. This marked a significant milestone in his journey and reflected the effort and dedication he has invested at every stage of his work.
"Knowing that a roaster buys and values my coffee makes me feel proud. Additionally, receiving a fair
payment has allowed me to improve my home and continue growing as a producer," he shares with
gratitude. Looking to the future, Hamith continues working with passion, dreaming of delivering micro-lots that represent his story and love for coffee.
